Mendocino Artichoke Chicken
4 boned and skinned chicken breasts
14 oz. can of artichokes, packed in water (drained, liquid reserved)
1/4 cup Seeds & Suds Mendocino Mustard
1/4 cup frozen orange juice, thawed
Preheat oven to 350 degrees. Place chicken breasts in a casserole dish. Top with artichokes. Mix artichoke liquid and mustard together and pour over chicken. Pour orange juice over chicken and bake covered for 1 hour or until tender.

Mendocino Mustard Hot & Sweet makes a perfect glaze. Simply brush on meat before baking or roasting.

Mendocino Mustard Seeds & Suds is great right out of the jar: try it as a dip for pretzels or breadsticks.

When the choice came down to selling worms or going into the mustard business, the world can be grateful that Devora Rossman decided to do the latter.

“I was an underpaid teacher, and my former partner was a struggling artist,” she explains. “We needed to do something to supplement our meager incomes. Our first business property statement listed a bowl, a whisk, a Tupperware pitcher and a spatula!”

Family and friends gave rave reviews to the first batches, and news started to spread. At first the mustard was only for sale in Mendocino, but visitors to that lovely county began taking jars home with them, and now the mustard is sold all over the United States.

The signature mustard, Hot & Sweet, debuted in 1977 and became a California classic. In 1996 a second product was introduced: Seeds & Suds, a spicy seeded beer mustard, made with Red Seal Ale from neighboring North Coast Brewing Company. Both mustards have won numerous awards and a faithful following of fans. Devora is particularly proud of the fact that the Mendocino Mustard products are certified kosher. “It underlines the care we take with our products. We try to put our hearts and integrity into our mustard.”

Mendocino Mustard is still handcrafted in a small kitchen located smack dab on the Pacific Coast. “We can watch whales spout from our windows!” Devora exclaims. The staff includes two office cats, Wuffles and Wampus, and all share her original commitment to the finest quality and adding a little spice to life.
